Paleo breakfast porridge with pepitas and blueberries

Egg whites are the secret ingredient in this paleo-friendly breakfast cereal. When whipped and cooked they become fluffy and soft, making a perfect base for fiber-rich flax, protein-backed pepitas and any other toppings you might like to add.


  • ¼ cup pumpkin seeds
  • 1 medium banana
  • 4 egg whites
  • 1/2 cup hemp milk
  • 1 tablespoon flaxseed meal
  • 2 teaspoons hemp seeds
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¼ cup blueberries



Make the porridge

  • Coarsely chop pumpkin seeds.
In a large mixing bowl, mash the banana. Stir in the egg whites, hemp milk, flaxseed meal, hemp seeds, vanilla extract, cinnamon, and salt.
Using a standard blender, hand blender or whisk, whip until frothy.


Cook the porridge

In a pot over medium heat, add the banana and egg white mixture and cook, whisking until creamy and slightly thickened, 3 to 5 minutes. Remove from the heat.



Transfer the porridge to individual bowls, top with the pumpkin seeds and blueberries, and serve.
